Chef’s Notes:
Opens with oak, cherry, a maple-ish molasses note to a simmering dark caramel
On the palate the burn is minimal for the proof, a wave of candied cherries, oak and orange zest mingle together. Medium long finish with plenty of chew. The candied oak is fantastic, I’m not a big double oak fan but this is special. The layers of flavor is what highlights this for me. At 142+ proof, the finish is just tons of chew and waves of flavor.
Starts with oak and cherry on the nose, followed by a maple-molasses note that reminds me of dark caramel cooking on the stove.
The proof drinks way below its number. The first sip brings a wave of candied cherries, followed by oak and a pop of orange zest that keeps everything from getting too sweet. What I like most is how the flavors keep building instead of peaking early.
The finish is long, rich, and chewy with plenty of candied sweet oak hanging around. I’m usually not a huge double-oaked whiskey guy, but this one is different. The extra oak doesn’t cover anything up—it adds another layer. At 142+ proof, there’s a lot going on, and every sip seems to bring out something a little different. That’s what makes it special for me.
